Breakfast for Dinner Salad

Like many 40-somethings, my first encounter with “healthy” living was taking as much fat out of my diet as possible. Snackwells was the closest thing to heaven I could imagine. FAT-FREE chocolate-covered-cookies? Yes, please!

If it had fat, it was (unfairly) considered unhealthy. Avocados? Out. Fat-free? In. Cue the Twizzlers and Hot Tamales. Oh, the shame.

Today’s recipe would disappoint 1992 Amy. My mother may still be a bit horrified. If you’re a lean eater, then this recipe may not be for you.

But if you’re willing to splurge on a little fat for a taste explosion? Come with me. Most of the fat is healthy and all of it is delicious.

Creatively and lazily inspired

My mother is amazing at creating meals based on what’s available. She can throw together delicious lunches from a pantry and refrigerator that desperately needs a grocery run. Me, I’m not so great. The rule follower in me wants to find a nice, clean recipe and follow it.

I’m not sure what led me to getting creative the day I put this together. More than likely it involved me being too lazy to go to the store. Regardless, I actually came up with this on my own! No recipe inspiration! (Hey, I gotta take those proud moments when I can.)

Between the roughage from the arugula, protein from eggs, and fat from avocado and bacon, this meal will stick with you for hours.

The arugula is what makes this meal. (Well, that and the bacon … because everything goes better with bacon.) The peppery leaf complements the eggs and gives it all a little zip.

Make the cleanup easier

Have you ever cooked bacon in the oven? Simply line a baking sheet with foil and place the uncooked bacon strips side by side on top of the foil. Don’t overlap them.

Sure, you could put a cooling rack on top of the foil and let the grease drip down. But that would mean more cleanup and we’ve already established I’m a little lazy. (Actually, my people do the dishes, so really that’s just me being thoughtful so they don’t have extra work. So there.)

Put it in the oven THEN turn it on to 400. Cook for 12-18 minutes, depending on how crispy you like your bacon.

I’m an over-easy kind of girl when it comes to eggs. I like those whites firm but a runny yellow center. “Popping” the yolk gives me a strange mini-burst of happiness, and knowing I’ve cooked that egg just so gives me an equally strange sense of satisfaction.

Between the runny yolk and greasy bacon, there really is no need for dressing. Trust me. The flavors do all the work for you and you don’t need anything else.

If you’re into putting butter in your coffee, you’ll be happy to know this is Keto-friendly. With the right kind of bacon, it also fulfills the Paleo rules. Oh, and it’s gluten-free as well. Take that, 1992! (Just goes to show you we should be judicious in choosing what diet we follow, as trends are always changing. But that’s another post for another day.)

My family devoured this for dinner. I mean, totally gobbled it up. We tried to come up with a recipe name. I wanted something along the lines of BLEAT. (Like a BLT but with Egg and Avocado.) Now that I look at this, I could have rearranged those letters and called it TABLE. But I suppose that wouldn’t have given you any idea of what this is.

My hubby suggested the title and it stuck. So I present to you:


Breakfast for Dinner Salad (serves 1)

2 pieces of thick bacon*

2 cups arugula

½ cup grape tomatoes, halved (or diced regular, whatever you have on hand)

¼ large avocado, diced

¼ tbs butter

2 eggs

Directions:

Cook bacon according to directions or as guided above in the oven.

Arrange arugula, tomatoes, and avocado.

Check your news feed until bacon is done.

Melt butter in skillet and fry eggs.

While eggs are cooking, cut or crumble bacon on top.

Top salad with eggs.

Pop the center and enjoy.

*If you’re thinking, “Amy, who cooks only two pieces of bacon?” the anser is no one. Do what I do: cook the entire package. Whatever isn’t consumed by your hungry people (good luck with that) can be saved. Wrap in a paper towel and place in a Ziploc bag. To reheat, pop in your toaster oven and toast for 4-5 minutes. It’s not perfect but it will heat and crisp nicely without exploding in your microwave.
